The wife wants to try Beef Birria tacos. She probably saw somebody making them on tiktok or something. They are kinda popular right now. I am putting down the ingredients here so I can remember them when I go shopping for the stuff.

Ingredients

Put all this stuff in the slow cooker and let it go overnight.

Beef Birria:

3-4 lbs beef (chuck roast, short ribs, or brisket)
5-6 dried guajillo chiles (stemmed, seeded)
3 dried ancho chiles (stemmed, seeded)
2 dried chipotle chiles (optional, for heat)
1 large onion, quartered
5 garlic cloves
2 tomatoes, halved
1 tbsp oregano (Mexican preferred)
1 tsp ground cumin
1 tsp ground coriander
1 cinnamon stick
2 bay leaves
1 tsp black peppercorns
4 cups beef broth
1/4 cup apple cider vinegar
Salt to taste

After this has cooked overnight, assemble the tacos like this:

Corn tortillas
Shredded mozzarella or Oaxaca cheese
Chopped cilantro
Diced onion
Lime wedges
Consommé (broth from birria) for dipping
