The wife wants to try Beef Birria tacos. She probably saw somebody making them on tiktok or something. They are kinda popular right now. I am putting down the ingredients here so I can remember them when I go shopping for the stuff.

Ingredients

Put all this stuff in the slow cooker and let it go overnight.

Beef Birria:

  • 3-4 lbs beef (chuck roast, short ribs, or brisket)
  • 5-6 dried guajillo chiles (stemmed, seeded)
  • 3 dried ancho chiles (stemmed, seeded)
  • 2 dried chipotle chiles (optional, for heat)
  • 1 large onion, quartered
  • 5 garlic cloves
  • 2 tomatoes, halved
  • 1 tbsp oregano (Mexican preferred)
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 cinnamon stick
  • 2 bay leaves
  • 1 tsp black peppercorns
  • 4 cups beef broth
  • 1/4 cup apple cider vinegar
  • Salt to taste

Stuff to put on them when serving

After this has cooked overnight, assemble the tacos like this:

Corn tortillas
Shredded mozzarella or Oaxaca cheese
Chopped cilantro
Diced onion
Lime wedges
Consommé (broth from birria) for dipping
