The wife wants to try Beef Birria tacos. She probably saw somebody making them on tiktok or something. They are kinda popular right now. I am putting down the ingredients here so I can remember them when I go shopping for the stuff.
Ingredients
Put all this stuff in the slow cooker and let it go overnight.
Beef Birria:
- 3-4 lbs beef (chuck roast, short ribs, or brisket)
- 5-6 dried guajillo chiles (stemmed, seeded)
- 3 dried ancho chiles (stemmed, seeded)
- 2 dried chipotle chiles (optional, for heat)
- 1 large onion, quartered
- 5 garlic cloves
- 2 tomatoes, halved
- 1 tbsp oregano (Mexican preferred)
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 cinnamon stick
- 2 bay leaves
- 1 tsp black peppercorns
- 4 cups beef broth
- 1/4 cup apple cider vinegar
- Salt to taste
Stuff to put on them when serving
After this has cooked overnight, assemble the tacos like this:
- Corn tortillas
- Shredded mozzarella or Oaxaca cheese
- Chopped cilantro
- Diced onion
- Lime wedges
- Consommé (broth from birria) for dipping
